Authentic key lime juice is produced 100% from the juice of "Key Limes" only. With a brix of 7.0 - 7.1, this juice exceeds that USDA standard for lime juice of 6.0, delivering a product with a much bolder recognizable flavor. For this reason, many chefs and bakers prefer authentic key lime juice to a generic lime juice. In addition to the one and only key lime pie, this enhanced flavor can add a little more identity to cakes, salad dressings, marinades, and cocktails.
