"75cl / 60.0% - California's St. George Spirits were ready when the absinthe ban in America was lifted because the ban was only on selling absinthe, not actually distilling it. For 11 years, they therefore perfected their recipe until it was just right. In 2007 the ban was lifted and St George could sell it to the public, making it the first legal American absinthe released after the ban. Their absinthe takes two infusions of powerfully potent ingredients, firstly infusing brandy with star anise, wormwood and fennel then distilling it. After that, a second infusion of mint, tarragon, opal basil, lemon balm, hyssop, meadowsweet, and stinging nettles takes place. With lots of strong flavours, you expect a bit of an argy bargy between them, but St. George has figured out a way to make them all get along. Plus, a monkey on the bottle. With a cowbell..."
