This small shiny white kidney-shaped bean is tender and melting, with a thin skin. It is a specialty of the Vendee and Poitou Charentes regions. Like other white beans, it is good with lamb and sausages and even with seafood. It is also good served simply in a salad. Or rub a slice of bread with garlic, butter it, spread the beans on top, et voilà! the Vendéen favorite, the gralée de mogette.
