Our cognac is made from just the clear wine, not the heavy lees or sediments of the grapes. This wine is then distilled twice in copper pot stills to create an eaux-de-vie. We then age this in French oak barrels for many years to develop complex aromas and colours. We insist on a unique type of fine grained oak barrel called ‘Tronçais', which allows the eaux-de-vie to extract light, soft and subtle tannins from the wood. This creates an aromatic and complex cognac with a hint of vanilla. The Martell cellar master then carefully selects and blends eaux-de-vie from different vintages to create our cognacs.
