Château Salmonière has some 9 hectares of wines and was a command post of the Knights Templar in the 15th century. Nowadays it is owned by the CHON family who have been vineyard owners in the region for over 300 years. The wine is refreshingly crisp, but has great depth of flavour with citrus notes and a delicious minerality, having been left on its lees (sur lie) for over six months after fermentation.
