Urban Gita's idea for ghee was born from a desire to bring ancient wisdom into modern times, making "Healthy Living Made Simple." Their organic, grass-fed ghee is made in the "traditional" way from cultured butter, this makes it different than just clarified butter. It is clarified for 2 hours or more to get the purest oil, free from all the milk solids and then filtered through a cheese cloth to ensure quality. The product does not require refrigeration- that statement is being removed from future labels. You'll note that the ghee has a grainy texture, which indicates a high quality ghee that is sealed right away so that no oxidation occurs, which ensures no spoilage is possible. Plus when sealed at the high temperature, it sterilizes the jar. This ghee contains no lactose or casein, but the Oregon Department of Agriculture requires that the label state that it is made from dairy for severe allergies.
