The eggs are medium in size and can vary in colour from light brown grey to dark brown with subtle grey undertones. Caviar Notes: This 'New World' caviar is a cross-bred between the Huso Dauricus and the Acipenser Schrenckii sturgeon, both of which are indigenously found in the Amur River. This caviar has all the qualities of a fine Huso Huso, but it has an after note that is accentuated by the powerful flavour of the Acipenser Schrenckii. This hybrid sturgeon is caviar mature at 8 - 10 years, with eggs that are medium in size. Simply a delight that one must try...
