Cados au Calvados,an unpasteurised cow's milk cheese, perfectly illustrates the fantastic array of flavours found in French Normandy. The rich and earthy Camembert is the perfect contrast to the dry apple brandy. The cheese, once the rind has been peeled away, is left to macerate in the Calvados for several hours and then rolled in bread crumbs. The result is a full flavoured soft cheese with a slight sweet and sour under note. The cheese is often served with walnuts and drunk with a dry cidre.
