This delicious pasteurised cow's milk cheese originates from Olivet, a town situated on the river Loire in central France. The milk is collected during the spring when the cows graze on the lush pastures along the river valley. Traditionally the cheese is matured for a month beneath the ashes produced by burning the vine clippings. The cheese has an earthy aroma and a delicate taste.Try paired with one of the Loire valley wines such as a red Sancerre.
