Carboncino is a rich and creamy Italian cheese made from a beautiful blend of cow's, goat's and sheep's milk. Its name literally translates to 'little charcoal', referring to its silvery-grey rind, which it acquires as it ages in ash. Carboncino has a pale yellow interior that is soft and creamy with a distinct tangy flavour and sweet undertones brought about by the mixture of milks. Serve Carboncino after dinner with crackers and a glass of full-bodied red wine.
