Salted ricotta is hard to come by in the UK but is a staple in Italian cuisine, often crumbled into salads or shaved over plates of cured meat like bresaola. The slightly sharp tang, hazelnut and floral notes and granular texture melt into mellow creaminess on the tongue; it's quite different from the more ubiquitous soft ricotta. This barrel-aged cheese is made from heated whey leftover from mozzarella production and is matured for at least 40 days.
