Bleu de Bresse is an excellent entry-level blue cheese, as well as a great choice for the milder cravings of dedicated blue cheese lovers. The creamy, delicate interior is reminiscent of Brie with patches of tangy blue mould. It has a soft white rind and a slight aroma of mushroom. The flavour is distinct, yet not overpowering and it leaves a lovely lingering butteryness in the mouth.
