A roast venison haunch makes a real change to the usual beef or lamb joint. Marinate the haunch before roasting, not that it needs to be tenderised, but because deer meat has much less fat than farm-reared animals and you want the venison moist and rich. If you prefer a boneless joint, carefully tunnel out the joint and keep the bone to roast for stock.
