A succulent, and highly prized shellfish, langoustines (also known as scampi) are closely related to lobster. Langoustines are a high-value shellfish that are famous for their sweet flavour and plump, succulent meat. Serve langoustines very simply - they are delicious cold with a dash of mayo and lemon, or butterflied and grilled with garlic butter and parsley. To cook from raw, poach in a large pan of salty water on a rolling boil for three minutes, then plunge them straight into an ice bath. Careful not to over cook as they will be ruined.
