Roscoff pink onions owe their name to the colour of their skin and flesh and have been grown around the Finistère town of Roscoff for the past 400 years. Roscoff pink onions are planted between mid-February and mid-April. When the Roscoff onions are destined for plaits, they are lifted from August onwards, before they are completely mature, and are then dried. Roscoff pink onions are rich in vitamin C and can be enjoyed raw or cooked, in tarts, soups, confits etc. The history of the onion in the Roscoff area stretches back some 400 years when a monk brought back a few seeds which he then planted in the monastery garden
