Bay leaves, sometimes called laurel leaves, are prized for their aromatic flavor. Ancient Greeks honored achievement with laurel wreaths. True bay leaves come from Turkey. The flavor of these Turkish bay leaves is far milder and more complex than that of domestic bay; it adds a subtly sweet astringency to dishes. Their aromatic, tea-like flavor enhances stews, beans, pasta sauces and marinades. Only one or two are needed to enhance a whole roast, pot of soup or stew. When ordering whole bay leaves, as well as other dried herbs, remember that they are very light. One-half ounce is quite a lot, about 1 cup in volume
