These pinta beans from La Chinata have a very thin skin and are easy to cook, and they're characterised by a very high iron content compared to most vegetables. They're very soft and tasty. To prepare: begin by rinsing in cold water and then soaking for 8-12 hours. If your water is alkaline, as it often is in coastal areas, you might be better off using bottled water for soaking and cooking. Add the ingredients for seasoning, like leeks, carrots, garlic, peppers, onions, and sausage or meat, and bring to the boil. Cook slowly and steadily for about two hours in a casserole dish, making sure that the mixture doesn't boil dry. In a pressure cooker, the time will be about 50 to 60 minutes. In Spanish, this product is called, "Alubia Pinta La Chinata."
