This high-quality dark red membrillo is made using 50% quince, carefully sieved to remove any impurities, together with sugar, as on its own it is rather sharp. Traditionally served with Manchego and other Spanish cheeses, but also used with meats such as lamb and duck, either as an accompaniment or mixed in with the juices to make a delicious gravy.
