The opening of the bottle is wide, providing easy access whether you're reaching with fingers for a pinch or spoon for a scoopful. Mace is the outer shell of the nutmeg fruit. It has a lighter, sweeter flavor. Upon opening the small, plum-sized fruit of the nutmeg tree, the nutmeg inside is protectively covered by the thin, lacy-looking scarlet-colored shell. This covering is called mace. After the mace is peeled from the shell and dried, its beautiful scarlet color fades to a light brown. Its flavor is similar to, but more delicate than, the sturdy nutmeg. Blade mace is used for soups and sauces, and is often found in wine mulling mixtures. Upon grinding, mace is used in a variety of desserts. Because of its rather strong flavor and aroma, a little bit does go a very long way.
