# Almond Cocoa Biscuits with Citrus Zest

- 12 g [Cocoa powder](https://fridge.menu/en/i/cocoa-powder)
- 125 g [Plain flour](https://fridge.menu/en/i/flour)
- 0.5 tsp [Bicarbonate of soda](https://fridge.menu/en/i/baking-soda)
- 1 tsp [Cinnamon](https://fridge.menu/en/i/cinnamon)
- 25 ml [Milk](https://fridge.menu/en/i/milk)
- 40 ml [Water](https://fridge.menu/en/i/water)
- 40 g [Dark chocolate](https://fridge.menu/en/i/dark-chocolate)
- 1 pcs [Lemon zest](https://fridge.menu/en/i/lemon-zest) — from an unwaxed fruit
- 1 pcs [Orange zest](https://fridge.menu/en/i/orange-zest) — from an unwaxed fruit

## Steps

1. Toast the almonds on a baking tray lined with parchment in an oven preheated to 180°C. (6 min)
2. Stir the almonds from time to time while toasting.
3. Transfer the almonds to a blender and chop them coarsely.
4. In a bowl, mix the dry ingredients: sugar, flour, cocoa powder, bicarbonate of soda and cinnamon.
5. Add the lemon and orange zest (wash the citrus fruit thoroughly beforehand).
6. Add the chopped almonds and mix.
7. Pour in the milk, water and melted dark chocolate, and mix well.
8. Stir with a spoon, then knead by hand until a soft dough forms.
9. On a floured surface, shape into logs 2-3 cm wide, flatten slightly with your fingers and cut diagonally.
10. Bake the biscuits on a tray in an oven preheated to 180°C. (14 min)
