- 130 g [Caster sugar](https://fridge.menu/en/i/sugar)
- 1 tsp [Vanilla extract](https://fridge.menu/en/i/vanilla-extract)
- 1 pcs [Lemon zest](https://fridge.menu/en/i/lemon-zest)
- 50 ml [Vegetable oil](https://fridge.menu/en/i/vegetable-oil)
- 50 g [Double cream](https://fridge.menu/en/i/cream)
- 70 g [Milk](https://fridge.menu/en/i/milk)
- 150 g Rice flour
- 50 g [Cornflour](https://fridge.menu/en/i/corn-starch)
- 16 g [Baking powder](https://fridge.menu/en/i/baking-powder)
- [Icing sugar](https://fridge.menu/en/i/powdered-sugar) — to taste
- [Cinnamon](https://fridge.menu/en/i/cinnamon) — to taste

## Steps

1. Crack the eggs into a bowl and whisk with a mixer with the sugar, vanilla extract and lemon zest for a few minutes
2. Pour in the vegetable oil in a thin stream, whisking all the while
3. Sift the rice flour, cornflour and baking powder and gradually add to the egg mixture
4. Alternately add the double cream and milk until the batter is smooth
5. Pour the batter into a greased tin and level the surface
6. Slice the apples and arrange them in a fan over the batter
7. Decorate with icing sugar and cinnamon
8. Bake in a preheated oven at 180°C (40 min)
9. Remove from the oven and let cool
