# Rocket Pesto Pasta with Lemon

- 400 g [Cherry tomatoes](https://fridge.menu/en/i/tomato)
- 1 tsp [Sugar](https://fridge.menu/en/i/sugar)
- 200 g [Rocket](https://fridge.menu/en/i/arugula)
- 50 g [Pine nuts](https://fridge.menu/en/i/pine-nut)
- [Almonds](https://fridge.menu/en/i/almond) — to taste
- 40 g [Parmesan](https://fridge.menu/en/i/parmesan)
- 1 pcs [Lemon](https://fridge.menu/en/i/lemon)
- 100 g [Olive oil](https://fridge.menu/en/i/olive-oil)
- [Salt](https://fridge.menu/en/i/salt) — to taste

## Steps

1. Wash and halve the cherry tomatoes, then arrange them on a baking tray lined with baking paper.
2. Add salt, sugar and olive oil, then roast in an oven preheated to 120°C. (120 min)
3. Transfer the rocket to a blender, add the Parmesan, pine nuts, lemon juice and a pinch of salt.
4. Blend, gradually pouring in the olive oil in a thin stream, until all the ingredients combine into a smooth, creamy pesto.
5. Cook the pasta in boiling water for the time stated on the packet, until al dente, then drain.
6. Combine the pasta with the pesto, mix well, adding a spoonful of pasta water if needed.
7. Plate up and finish with the roasted tomatoes and toasted almond flakes.
