- 250 g [Ricotta](https://fridge.menu/en/i/ricotta)
- 1 pcs [Shallot](https://fridge.menu/en/i/shallot)
- 3 pcs [Eggs](https://fridge.menu/en/i/eggs)
- 100 g [Parmesan](https://fridge.menu/en/i/parmesan)
- [Thyme](https://fridge.menu/en/i/thyme) — to taste
- [Olive oil](https://fridge.menu/en/i/olive-oil) — to taste
- [Salt](https://fridge.menu/en/i/salt) — to taste
- [Black pepper](https://fridge.menu/en/i/black-pepper) — to taste
- 1 pcs [Ready-rolled puff pastry](https://fridge.menu/en/i/unleavened-puff-pastry)

## Steps

1. Wash the asparagus under running water and peel with a vegetable peeler. Tie the stalks into a bundle with kitchen string.
2. Place the asparagus in a large pot of water and cook, depending on the thickness of the stalks.
3. Drain the cooked asparagus in a colander and leave to cool.
4. Cut off the tips, set them aside separately, and slice the stalks into rounds.
5. Finely chop the shallot and fry it in a pan with olive oil until golden.
6. Add the sliced asparagus stalks to the shallot and sauté over medium heat for about 5 minutes. (5 min)
7. In a bowl, beat the eggs with a mixer, add the ricotta and continue beating until smooth.
8. Add the Parmesan, the sautéed asparagus and the thyme. Season with salt and black pepper and mix.
9. Line a 24 cm tart tin with the puff pastry.
10. Prick the base with a fork and spread the filling evenly over the surface.
11. Arrange the asparagus tips on top, decorating the surface to your liking.
12. Brush the surface of the tart and the asparagus tips with olive oil.
13. Bake in a preheated oven at 180°C for at least 50 minutes in static (fan-off) mode. (50 min)
14. Take the tart out of the oven and let it cool slightly.
15. Serve on a platter whole or cut into slices or cubes.
