- 2 pcs [Leek](https://fridge.menu/en/i/leek) — sliced into rings
- 50 g [Spinach](https://fridge.menu/en/i/spinach)
- 300 g [Potato](https://fridge.menu/en/i/potato) — boiled, cooled, diced
- 50 g [Sun-dried tomatoes](https://fridge.menu/en/i/sun-dried-tomatoes) — finely chopped
- 10 pcs [Eggs](https://fridge.menu/en/i/eggs)
- 200 ml [Crème fraîche](https://fridge.menu/en/i/creme-fraiche)
- 0.5 tsp [Dried thyme](https://fridge.menu/en/i/dried-thyme)
- 10 g [Butter](https://fridge.menu/en/i/butter) — for the dish
- [Salt](https://fridge.menu/en/i/salt)
- [Black pepper](https://fridge.menu/en/i/black-pepper) — freshly ground
- 100 ml [Chives](https://fridge.menu/en/i/chives) — finely chopped
- 6 pcs [Rye bread](https://fridge.menu/en/i/rye-bread) — sliced

## Steps

1. Place the broccoli, leek, baby spinach, boiled cooled diced potato and sun-dried tomatoes into a greased baking dish and mix together. (10 min)
2. Whisk the eggs, crème fraîche and thyme together in a bowl until smooth. (5 min)
3. Pour the mixture over the vegetables in the dish and bake in a preheated 175°C (fan) oven for 30–45 minutes, until the egg is set. (40 min)
4. Serve the baked frittata with finely chopped parsley and rye bread.
