# Beef-Filled Pancakes

## Ingredients

- 3 pcs Eggs
- 350 ml Milk
- 1 pinch Salt
- 110 g Plain Flour
- 50 g Wholemeal Flour
- 1 tbsp Butter — for frying
- 250 g Beef Mince
- 1 pcs Onion — finely chopped
- 2 clove Garlic — finely chopped
- 1 tsp Cumin — ground
- 1 tsp Ground Coriander
- 100 g Carrot — coarsely grated
- 200 g Courgette — coarsely grated
- 400 g Tinned Chopped Tomatoes
- 140 g Sweetcorn — tinned
- 150 g Cheddar — coarsely grated
- 1 tsp Olive Oil — for frying
- Black Pepper — freshly ground, to taste
- 1 pcs Avocado
- 1 pcs Lime — juice and finely grated zest
- 0.5 tsp Cumin — ground
- 1 bunch Parsley — finely chopped
- 125 g Lettuce

## Steps

1. Whisk the eggs with the milk, salt, wholemeal and plain flour. Melt the butter in a frying pan and fry the pancakes one at a time on both sides until light golden brown. (12 min)
2. Fry the beef mince in a hot pan with olive oil, stirring constantly, until browned. Lower the heat, add the onion, garlic, cumin and coriander, and cook until the onion softens. (6 min)
3. Add the carrot, courgette, chopped tomatoes and sweetcorn to the pan. Stir and simmer uncovered for 5–10 minutes. (5 min)
4. Season the beef filling with salt and freshly ground black pepper to taste. (1 min)
5. Mash the avocado flesh with a fork on a plate and season with lime juice, finely grated lime zest, salt and cumin. (2 min)
6. Fill each pancake with a few spoonfuls of the beef filling and a little cheddar, then roll up. Place seam-side down on a dish. Sprinkle the remaining grated cheddar on top. (3 min)
7. Bake the pancakes in the oven at 200°C with fan for about 10 minutes. (10 min)
8. Sprinkle the pancakes with finely chopped parsley and serve with lettuce and the smashed avocado. (1 min)
