# Blueberry Cheesecake

## Ingredients

- 320 g [Digestive biscuits](https://fridge.menu/en/i/crackers)
- 150 g [Butter](https://fridge.menu/en/i/butter) — melted
- 500 ml [Double cream](https://fridge.menu/en/i/cream) — unsweetened, for whipping
- 130 g [Icing sugar](https://fridge.menu/en/i/powdered-sugar)
- 250 g [Ricotta](https://fridge.menu/en/i/ricotta)
- 300 g [Blueberries](https://fridge.menu/en/i/blueberry)
- 20 g [Caster sugar](https://fridge.menu/en/i/sugar)
- 15 g [Gelatine](https://fridge.menu/en/i/gelatin)
- [Blueberries](https://fridge.menu/en/i/blueberry) — to taste, for decoration
- [Mint](https://fridge.menu/en/i/mint) — to taste, for decoration

## Steps

1. Crush the digestive biscuits and mix with the melted butter until you get an even, crumbly mixture.
2. Press the mixture into a 22 cm tin, packing it down with a spoon and smoothing the surface.
3. Put the tin in the fridge. (15 min)
4. Soak the gelatine in cold water. (10 min)
5. Combine the blueberries with the caster sugar and cook over a low heat, stirring constantly. (4 min)
6. Transfer the mixture to a bowl and blend with a hand blender until smooth.
7. Set aside about 50 g of the purée, squeeze out the gelatine and add it to this portion, stirring until dissolved.
8. Leave both portions of purée to cool.
9. Beat the ricotta until soft, add the cooled blueberry purée without gelatine and mix.
10. Add the blueberry mousse with the dissolved gelatine and mix.
11. Separately, whip the double cream with the icing sugar until thick and fluffy.
12. Gently fold the whipped cream into the ricotta-blueberry mixture in stages.
13. Spread the cream over the chilled base and smooth the surface with a spatula.
14. Put the cheesecake in the fridge. (240 min)
15. Before serving, decorate with fresh blueberries and mint leaves.
