# Pizza with Bolognese Sauce

- 1 tbsp [Olive oil](https://fridge.menu/en/i/olive-oil) — for the bowl
- 50 g [Bacon](https://fridge.menu/en/i/bacon)
- 1 pcs [Onion](https://fridge.menu/en/i/onion) — finely chopped
- 2 clove [Garlic](https://fridge.menu/en/i/garlic) — crushed

- 2 tbsp Balsamic vinegar

## Steps

1. Dissolve the yeast in a bowl with room-temperature water. Add a third of the flour, the olive oil and salt, and mix until smooth.
2. Gradually add the rest of the flour, stirring as you go.
3. Dust the worktop with flour and knead the dough by hand until elastic.
4. Grease a clean bowl with olive oil, place the dough in it and turn it so it is coated with oil.
5. Let the dough rise for 45 minutes at room temperature, then refrigerate until the next day. (45 min)
6. Fry the bacon in olive oil in a heavy-bottomed pan over medium heat.
7. Remove the bacon, drain the fat on a paper towel, then chop finely.
8. Add the onion, garlic, thyme and dried rosemary to the pan with the bacon fat and fry, stirring, until the onion softens.
9. Add the meat, raise the heat and brown it well.
10. Add the stock, sun-dried tomatoes, balsamic vinegar, chopped tomatoes and the finely chopped bacon.
11. Cover and simmer the Bolognese for about 1 hour over low heat, stirring occasionally. (60 min)
12. Remove the lid and reduce the sauce until creamy and rich.
13. Refrigerate the sauce until the next day.
14. The next day, dust the worktop with flour. Divide the dough and shape round pizza bases.
15. Preheat the oven to 250°C with a steel baking plate on the rack.
16. Spread the Bolognese and roughly chopped mozzarella on the bases and bake on the steel baking plate for about 6–10 minutes, or until the base is crisp. (8 min)
17. Grate over a little parmesan and sprinkle with fresh thyme before serving.
