- 25 g [Yeast](https://fridge.menu/en/i/yeast)
- 100 ml [Yogurt](https://fridge.menu/en/i/yogurt)
- 50 g [Oats](https://fridge.menu/en/i/oatmeal)
- 100 g Rye flour
- 120 g [Wholemeal flour](https://fridge.menu/en/i/whole-wheat-flour)
- 1 tsp [Salt](https://fridge.menu/en/i/salt)
- 350 g [Plain flour](https://fridge.menu/en/i/flour)
- 1 pcs [Egg](https://fridge.menu/en/i/eggs) — beaten, for glazing
- 1 pinch [Sesame seeds](https://fridge.menu/en/i/sesame-seeds)
- 70 g [Tomato paste](https://fridge.menu/en/i/tomato-paste)
- 1 bunch [Basil](https://fridge.menu/en/i/basil) — fresh leaves
- 75 g [Prosciutto](https://fridge.menu/en/i/prosciutto)
- 125 g [Mozzarella](https://fridge.menu/en/i/mozzarella) — fresh

## Steps

1. Dissolve the yeast in a bowl with the water.
2. Add the yogurt, oats, rye flour, wholemeal flour and salt, and mix the dough well.
3. Gradually add the plain flour, mixing until the dough is ready to be kneaded on the worktop — soft and slightly sticky.
4. Transfer the dough to a clean bowl and leave it to rise on the worktop for 2 hours.
5. Divide the dough into 14 equal pieces, flatten each slightly and place a little tomato paste, mozzarella, prosciutto and a fresh basil leaf in the centre.
6. Gather the dough around the filling, sealing all the edges well.
7. Dust your hands lightly with flour and roll the rolls into balls.
8. Place the rolls seam-side down on a baking tray lined with baking paper.
9. Leave to rise for 45 minutes, covered with a clean tea towel.
10. Brush with beaten egg and sprinkle with sesame seeds.
11. Bake in a preheated oven at 175°C (fan) for 20–25 minutes.
12. Leave to cool slightly on a wire rack before serving.

## What was changed

Serrano ham was replaced with Prosciutto, as it is the cured ham typically found in UK shops.
