# Chequerboard Biscuits

A two-colour biscuit dough, plain and cocoa, sliced and baked to make a chequerboard pattern.

## Ingredients

### Plain dough

- 150 g Plain flour
- 75 g Caster sugar
- 1 pcs Lemon zest
- 1 pinch Salt
- 2 pcs Egg yolk
- 90 g Butter

### Cocoa dough

- 130 g Plain flour
- 75 g Caster sugar
- 20 g Cocoa powder
- 1 pinch Salt
- 90 g Butter
- 2 pcs Egg yolk

## Steps

1. Pile the flour on the work surface, make a well, add the sugar, lemon zest, salt and egg yolks, and work together with your fingers.
2. Add the butter and knead into a smooth ball of dough.
3. Wrap the plain dough in cling film and chill in the fridge. (40 min)
4. Make the cocoa dough: mix the flour, sugar, salt, egg yolks, cocoa powder and butter.
5. Knead the cocoa dough into a smooth ball, wrap in cling film and chill. (40 min)
6. Roll out the plain dough with a rolling pin to a thickness of 1/2 cm.
7. Roll out the cocoa dough to the same shape and thickness.
8. Brush the cocoa sheet with water and carefully lay the plain sheet on top. Trim the edges.
9. Cut into strips 1 cm thick.
10. Alternating the colours, stack the strips together, brushing water between them.
11. Cut the stacked strips into biscuits 1/2 cm thick.
12. Place the biscuits on a baking tray lined with parchment and bake in a preheated fan oven at 150°C. (19 min)
