# Vegetarian Cowboy Toastie

- 100 g [Mature cheddar](https://fridge.menu/en/i/cheddar)
- 4 tbsp Sweet chilli sauce
- 1 tbsp [Parsley](https://fridge.menu/en/i/parsley) — finely chopped

## Steps

1. Melt the butter in a frying pan over medium heat and add the sliced onion. Cook over low-medium heat until completely softened and starting to caramelise. (10 min)
2. Transfer the onion to a bowl and place in the fridge to cool quickly. (8 min)
3. Fry the chopped onion in a pot with oil and butter for 5-7 minutes until softened. (5 min)
4. Add the carrot, courgette, garlic, thyme and rosemary and fry for about a minute. (1 min)
5. Add the chopped tomatoes, vegetable stock and beluga lentils. Mix the cornflour into the double cream and add it to the pot along with the red wine. (47 min)
6. Stir, cover with a lid and simmer over medium-low heat for 30 minutes, then adjust the taste with tomato paste, salt and pepper and simmer for a further 15-20 minutes. (17 min)
7. Spread a little sweet chilli sauce on half of the bread slices and add a slice of mature cheddar. Spoon over the cooled spiced lentil filling and the caramelised onion, then top with another slice of cheddar and bread. (3 min)
8. Toast on both sides in a toaster, in a pan with butter, or in the oven at 200°C with fan assistance for about 10-15 minutes, or until the bread is crisp and the cheese has melted. (12 min)
