- 8 pcs Flounder fillets — or another flat fish
- 2 pcs [Eggs](https://fridge.menu/en/i/eggs) — beaten
- 20 g [Plain flour](https://fridge.menu/en/i/flour)
- 30 g [Wholemeal flour](https://fridge.menu/en/i/whole-wheat-flour)
- 20 g [Butter](https://fridge.menu/en/i/butter) — for frying
- 2 tbsp [Olive oil](https://fridge.menu/en/i/olive-oil) — for frying
- [Salt](https://fridge.menu/en/i/salt)
- 1 pcs [Cucumber](https://fridge.menu/en/i/cucumber) — cut into sticks
- ½ pcs [Lemon](https://fridge.menu/en/i/lemon) — cut into wedges

### Tartare Sauce

- 50 ml [Mayonnaise](https://fridge.menu/en/i/mayonnaise)
- 100 ml [Crème fraîche](https://fridge.menu/en/i/creme-fraiche)
- 2 tbsp [Capers](https://fridge.menu/en/i/capers)
- 4 pcs [Pickled gherkins](https://fridge.menu/en/i/pickles) — finely chopped
- 1 tsp [Dijon mustard](https://fridge.menu/en/i/dijon-mustard)
- ½ pcs [Lemon](https://fridge.menu/en/i/lemon) — finely grated zest and juice
- 1 bunch [Dill](https://fridge.menu/en/i/dill) — finely chopped
- 1 bunch [Parsley](https://fridge.menu/en/i/parsley) — finely chopped
- 1 bunch [Chives](https://fridge.menu/en/i/chives) — finely chopped
- [Salt](https://fridge.menu/en/i/salt) — and freshly ground pepper

## Steps

1. Toss the potatoes with olive oil and salt, then spread them on a baking tray lined with parchment.
2. Roast the potatoes in a preheated oven at 200°C (fan) for about 30 minutes.
3. Turn the potatoes a few times during roasting.
4. Mix all the tartare sauce ingredients well and adjust the seasoning.
5. Beat the eggs in a bowl.
6. In another bowl, mix the plain flour, wholemeal flour, salt and pepper well.
7. Coat the fish fillets first in the beaten egg, then in the flour mixture.
8. Fry the fish fillets in butter and olive oil over medium heat for about 4-5 minutes on each side, until cooked through.
9. Serve the fish fillets with the potato wedges, tartare sauce, lemon wedges and cucumber sticks.
