# Dark Beer Beef Goulash

## Ingredients

- 800 g Beef
- 300 ml Dark beer
- Olive oil — to taste
- Potato starch — to taste
- 150 g Tomato passata
- 40 g Butter
- Paprika — to taste
- Salt — to taste
- Mixed dried herbs — to taste
- Datterini tomatoes — to taste
- 200 g Shallot
- 1 bunch Sage
- 1 bunch Rosemary

## Steps

1. Pour a little olive oil into two frying pans.
2. Peel and chop the shallot, add it to one pan and fry with the butter.
3. Trim the beef of any sinew, cut into cubes, season with salt, coat in potato starch and fry in the second pan, generously sprinkled with paprika.
4. Prepare a bouquet of sage and rosemary (or use whichever dried herbs you prefer).
5. Once the meat is well browned, pour in the dark beer and let it evaporate.
6. Transfer the meat to a pot together with the herb bouquet.
7. Add the shallot and the tomato passata.
8. Stir all the ingredients together and braise the goulash for about two hours. (120 min)
9. While cooking, top up with hot water if needed and check the goulash for salt.
10. To serve: use a serving ring to plate the meat in the centre, garnish with a datterini tomato and a sprig of rosemary, and dust with paprika.
