# Matcha Tea Cake

## Ingredients

- 250 g [Caster sugar](https://fridge.menu/en/i/sugar)
- 250 g [Butter](https://fridge.menu/en/i/butter)
- 250 g [Plain flour](https://fridge.menu/en/i/flour)
- 4 pcs [Eggs](https://fridge.menu/en/i/eggs)
- 16 g [Baking powder](https://fridge.menu/en/i/baking-powder)
- 2 tsp Matcha
- 2 tbsp [Milk](https://fridge.menu/en/i/milk)
- 0.5 pcs [Vanilla pod](https://fridge.menu/en/i/vanilla-pod)
- [Icing sugar](https://fridge.menu/en/i/powdered-sugar) — to taste

## Steps

1. Take the eggs and butter out of the fridge and let them come to room temperature. (30 min)
2. In a large bowl, combine the sugar and the butter, cut into pieces, and beat until smooth and creamy.
3. Split the vanilla pod in half, scrape out the seeds with the tip of a knife and add them to the batter.
4. Add the four whole eggs and beat again with a mixer until the mixture is light, fluffy and voluminous.
5. Gradually add the sifted flour, folding it in with circular, top-to-bottom motions.
6. Add the sifted baking powder and mix until you have a smooth, lump-free batter.
7. Gently warm the milk in a small saucepan. In a small bowl, mix two teaspoons of matcha with the warm milk into a thick, smooth paste.
8. Add the matcha-milk mixture to the batter and stir until evenly pale green.
9. Lightly butter a round 22 cm tin or line it with dampened, well-wrung baking paper.
10. Pour the batter into the tin and smooth the top with a spatula.
11. Bake in a preheated oven at 170°C (static/conventional) for 60 minutes. (60 min)
12. Check with a wooden skewer — it should come out dry; remove the cake from the oven and let it cool slightly.
13. Carefully remove the cake from the tin and transfer it to a wire rack to cool completely.
14. Before serving, dust the top of the cake with a mix of icing sugar and matcha.
