# Moroccan Chicken Stew

- 4 pcs [Chicken thighs](https://fridge.menu/en/i/chicken-thigh) — or another cut, e.g. a whole chicken, cut into pieces
- 2 pcs [Red onion](https://fridge.menu/en/i/red-onion) — finely chopped
- 3 tbsp [Olive oil](https://fridge.menu/en/i/olive-oil)
- 3 clove [Garlic](https://fridge.menu/en/i/garlic) — finely chopped
- 2 tbsp [Plain flour](https://fridge.menu/en/i/flour)
- [Salt](https://fridge.menu/en/i/salt) — to taste
- [Black pepper](https://fridge.menu/en/i/black-pepper) — to taste, freshly ground

- 40 g [Dried apricots](https://fridge.menu/en/i/dried-apricots) — finely chopped
- 30 g [Dates](https://fridge.menu/en/i/dates) — finely chopped
- 400 g [Canned chopped tomatoes](https://fridge.menu/en/i/canned-chopped-tomatoes)
- 200 ml [Stock](https://fridge.menu/en/i/stock)
- 0.5 pcs [Lemon](https://fridge.menu/en/i/lemon) — juice and a little zest
- 50 g [Almonds](https://fridge.menu/en/i/almond) — finely chopped
- 1 can [Chickpeas](https://fridge.menu/en/i/chickpeas) — drained and rinsed
- 1 bunch [Coriander](https://fridge.menu/en/i/coriander) — fresh
- 1 bunch [Mint](https://fridge.menu/en/i/mint) — fresh
- 300 ml Basmati rice — cooked according to pack instructions

## Steps

1. Fry the red onion and garlic over medium heat until soft.
2. Mix all the spices with the flour, salt and pepper, and toss the chicken pieces in half of the mixture.
3. Brown the chicken pieces in the pot until golden, then transfer to a plate.
4. Add the canned chopped tomatoes, stock, dates, dried apricots and the second half of the flour-spice mixture to the pot, and stir.
5. Return the chicken pieces to the pot, skin side up.
6. Add the finely chopped almonds, chickpeas, finely grated lemon zest and lemon juice.
7. Cover with a lid and place the pot in a cold oven, setting it to 150°C.
8. Braise the dish in the oven for 2 hours.
9. Season the sauce to taste with salt and pepper, and serve the fragrant chicken dish with rice and a sprinkle of fresh herbs.
