- 1 pcs [Eggs](https://fridge.menu/en/i/eggs)
- 1 pcs [Orange](https://fridge.menu/en/i/orange) — organic, finely grated zest
- 100 ml [Orange juice](https://fridge.menu/en/i/orange-juice) — freshly squeezed from the orange
- 500 g [Plain flour](https://fridge.menu/en/i/flour)
- 50 g [Dates](https://fridge.menu/en/i/dates) — roughly chopped
- 0.5 tsp [Cloves](https://fridge.menu/en/i/cloves)
- 2 tsp [Cardamom](https://fridge.menu/en/i/cardamom)
- 10 g [Salt](https://fridge.menu/en/i/salt)
- 75 g [Butter](https://fridge.menu/en/i/butter)
- 75 g [Hazelnuts](https://fridge.menu/en/i/hazelnut) — roughly chopped
- 75 g [Dark chocolate](https://fridge.menu/en/i/dark-chocolate) — roughly chopped
- 1 pcs [Eggs](https://fridge.menu/en/i/eggs) — for glazing
- 25 g Pearl sugar
- 25 g [Hazelnuts](https://fridge.menu/en/i/hazelnut) — for sprinkling

## Steps

1. Mix the milk with the yeast, then add the egg and orange juice. In a bowl combine the flour, zest, dates, cloves, cardamom and salt, and stir.
2. Knead the dough, preferably with a mixer on low speed, for 5 minutes. (5 min)
3. Add the butter and mix for another 5 minutes, until the dough becomes smooth and elastic. (5 min)
4. Fold in the hazelnuts and chocolate. Transfer the dough to a clean bowl, cover and let it rise on the kitchen counter for 45 minutes. (45 min)
5. Place the dough in the fridge until the next day. (540 min)
6. Take the dough out of the fridge, divide it into 12 buns, shape them round and place on parchment paper. (5 min)
7. Cover with a clean towel and let the buns rise on the kitchen counter for an hour and a half. (90 min)
8. Brush the buns with beaten egg, then sprinkle with pearl sugar and hazelnuts. (2 min)
9. Bake in a preheated fan oven at 175°C for about 20 minutes. (20 min)
