## Ingredients

- 320 g [Digestive biscuits](https://fridge.menu/en/i/digestive-biscuits)
- 150 g [Butter](https://fridge.menu/en/i/butter) — melted
- 1 tsp [Honey](https://fridge.menu/en/i/honey)
- 500 g [Mascarpone](https://fridge.menu/en/i/mascarpone)
- 250 ml [Double cream](https://fridge.menu/en/i/cream)
- 8 g [Gelatine](https://fridge.menu/en/i/gelatin)
- 4 tbsp [Milk](https://fridge.menu/en/i/milk) — warm
- 120 g [Icing sugar](https://fridge.menu/en/i/powdered-sugar)
- 400 g [Blueberries](https://fridge.menu/en/i/blueberry)
- 80 g [Icing sugar](https://fridge.menu/en/i/powdered-sugar)
- 200 ml [Water](https://fridge.menu/en/i/water)
- 18 g [Cornflour](https://fridge.menu/en/i/corn-starch) — dissolved in water
- 1 bunch [Mint](https://fridge.menu/en/i/mint) — leaves

## Steps

1. Crush the biscuits into crumbs, mix with the melted butter and honey. Press the mixture into a tin and firm it down.
2. Chill the base in the fridge. (60 min)
3. Mix the mascarpone with the icing sugar. Soak the gelatine in cold water. (10 min)
4. Dissolve the gelatine in the warm milk and add it to the mascarpone, mixing well.
5. Fold the whipped cream into the mixture. Spread it over the base and smooth the top.
6. Chill in the fridge for at least 1 hour. (60 min)
7. Simmer the blueberries with the icing sugar over low heat for a few minutes. Strain through a sieve.
8. Pour the juice back in, add the cornflour dissolved in water. Cook for a few minutes.
9. Let the jelly cool to room temperature.
10. Pour the jelly over the cheesecake. Chill in the fridge for at least 3 hours. (180 min)
11. Decorate with blueberries and mint leaves.
