- 60 g Amaretti biscuits
- 60 g Savoiardi (sponge finger) biscuits
- 3 pcs [Egg whites](https://fridge.menu/en/i/egg-whites)
- 120 g [Caster sugar](https://fridge.menu/en/i/sugar)
- 125 g [Plain flour](https://fridge.menu/en/i/flour)
- 25 g [Cocoa powder](https://fridge.menu/en/i/cocoa-powder)
- 65 ml [Red wine](https://fridge.menu/en/i/wine)
- 50 g [Almonds](https://fridge.menu/en/i/almond)
- 50 g Dried figs
- 50 g [Raisins](https://fridge.menu/en/i/raisins)
- 25 g [Pine nuts](https://fridge.menu/en/i/pine-nut)
- 8 g [Baking powder](https://fridge.menu/en/i/baking-powder)
- pinch [Cinnamon](https://fridge.menu/en/i/cinnamon) — to taste, optional
- pinch [Icing sugar](https://fridge.menu/en/i/powdered-sugar) — to taste, for dusting

## Steps

1. Crush the crackers, amaretti biscuits and savoiardi biscuits in a food processor to fine crumbs.
2. Tip the crumbs into a large bowl, add the caster sugar, cocoa powder, plain flour and baking powder, and mix.
3. Finely chop the almonds, pine nuts and dried figs with a knife and add to the mixture.
4. If you like, add a pinch of cinnamon for extra flavour.
5. Add the egg whites and mix everything together until smooth.
6. Turn the dough out onto a work surface and continue kneading by hand until it is compact and even.
7. Shape the dough into a log and cut into slices about 1 centimetre thick.
8. Shape each slice into a diamond and place on a baking tray lined with baking paper.
9. Bake at 180°C for about 25 minutes. (25 min)
10. Remove from the oven and leave to cool for a few minutes.
11. Before serving, dust with icing sugar if you like.
