# Red Velvet Pancakes

## Ingredients

- 120 g [Plain flour](https://fridge.menu/en/i/flour)
- 1 tbsp [Caster sugar](https://fridge.menu/en/i/sugar)
- 1/2 tsp [Salt](https://fridge.menu/en/i/salt)
- Food colouring — to taste, red
- 1 pcs [Eggs](https://fridge.menu/en/i/eggs)
- 200 ml [Milk](https://fridge.menu/en/i/milk)
- 30 g [Butter](https://fridge.menu/en/i/butter)
- 1 tsp [Baking powder](https://fridge.menu/en/i/baking-powder)
- [Bicarbonate of soda](https://fridge.menu/en/i/baking-soda) — a pinch
- 70 g [Cream cheese](https://fridge.menu/en/i/cream-cheese)
- 70 ml [Double cream](https://fridge.menu/en/i/cream)
- [Icing sugar](https://fridge.menu/en/i/powdered-sugar) — to taste
- [Maple syrup](https://fridge.menu/en/i/maple-syrup) — to taste

## Steps

1. Sift the flour into a large bowl, add the baking powder and bicarbonate of soda.
2. Add the salt and sugar, mix lightly so the dry ingredients are evenly distributed.
3. Separately, melt the butter in a bain-marie, then let it cool slightly.
4. Add the melted butter, milk and egg to the flour mixture, being careful not to overmix.
5. Add the red food colouring until you reach the desired shade, mixing until evenly distributed.
6. Leave the batter to rest for at least 30 minutes at room temperature. (30 min)
7. Heat a non-stick pan with a thin layer of butter and start pouring the batter, two tablespoons at a time.
8. Cook the pancakes until small holes appear on the surface, which means they have set.
9. Flip the pancake to cook the other side.
10. Repeat until the batter is finished.
11. Beat the cream cheese until smooth, gradually adding the icing sugar.
12. Add the double cream and whip the mixture to a light, creamy texture.
13. Stack the pancakes on top of each other and pour the cream cheese frosting over the top.
14. Generously drizzle everything with maple syrup.
