# Pasta alla Norma

A classic Sicilian pasta with fried aubergine, tomato sauce, basil and salty cheese.

## Ingredients

- 2 pcs Aubergine — cut into 1 cm cubes
- 1 tsp [Salt](https://fridge.menu/en/i/salt)
- 100 ml [Olive oil](https://fridge.menu/en/i/olive-oil)
- 400 g [Tinned chopped tomatoes](https://fridge.menu/en/i/canned-chopped-tomatoes)
- 3 clove [Garlic](https://fridge.menu/en/i/garlic) — finely grated
- 1 bunch [Fresh basil](https://fridge.menu/en/i/basil)
- 400 g [Pasta](https://fridge.menu/en/i/pasta)
- 1 tsp [Sugar](https://fridge.menu/en/i/sugar)
- [Salt](https://fridge.menu/en/i/salt) — to taste
- [Freshly ground black pepper](https://fridge.menu/en/i/black-pepper) — to taste
- 100 g [Parmesan](https://fridge.menu/en/i/parmesan)
- 1 bunch [Fresh basil](https://fridge.menu/en/i/basil)

## Steps

1. Mix the aubergine with salt in a bowl and leave to stand for 30 minutes. (30 min)
2. Squeeze out the moisture from the aubergine and pat dry.
3. Heat the oil in a frying pan over a medium-high heat until hot.
4. Fry the aubergine cubes in the pan, stirring constantly, until nicely golden.
5. Set the fried aubergine aside on a plate lined with kitchen paper.
6. Add the tinned tomatoes, garlic, salt, pepper and basil to the same pan, and let it simmer.
7. Cook the pasta until just shy of al dente, keeping back some of the pasta water.
8. Add the pasta to the pan with the sauce and mix well, loosening with a splash of pasta water to a creamy consistency.
9. Season with sugar, salt and pepper to taste, and serve topped with the aubergine, Parmesan and basil.
