# Crispy Pork Belly with Caramelised Onion and Asian-Style Noodles

- 600 g [Pork belly](https://fridge.menu/en/i/pork-belly) — with the rind removed
- 6 pcs [Onion](https://fridge.menu/en/i/onion) — halved and sliced
- 3 tbsp [Sesame oil](https://fridge.menu/en/i/sesame-oil)
- 3 tbsp [Soy sauce](https://fridge.menu/en/i/soy-sauce)
- 3 tbsp [Fish sauce](https://fridge.menu/en/i/fish-sauce)
- 3 clove [Garlic](https://fridge.menu/en/i/garlic) — finely grated
- 1 tbsp [Ginger](https://fridge.menu/en/i/ginger) — finely grated
- 30 g [Sugar](https://fridge.menu/en/i/sugar)
- 300 ml [Stock](https://fridge.menu/en/i/stock)
- 250 g Ramen noodles
- 150 g [Spinach](https://fridge.menu/en/i/spinach)
- 4 pcs [Egg yolks](https://fridge.menu/en/i/egg-yolk)
- 1 tsp [Sriracha](https://fridge.menu/en/i/sriracha)
- 0.5 tsp [Chilli flakes](https://fridge.menu/en/i/chili-flakes)
- 1 tsp [Sesame seeds](https://fridge.menu/en/i/sesame-seeds) — toasted
- 4 tbsp [Chives](https://fridge.menu/en/i/chives) — finely chopped
- 1 bunch [Coriander](https://fridge.menu/en/i/coriander) — roughly chopped, fresh

## Steps

1. Slice the pork belly (if not already sliced), then cut the slices into thin strips about 6-8 mm thick.
2. Heat a frying pan over medium heat and add the pork belly. Increase the heat slightly to medium-high and fry the pieces for 10-15 minutes until crisp on one side. Then turn with tongs and fry on the other side. (12 min)
3. Remove the pork belly from the rendered fat in the pan and place on a plate lined with paper towel.
4. Add the onion to the pan in the fat left from the pork belly, reduce the heat to medium and let the onion caramelise over medium heat for 10 minutes without stirring - it should turn golden brown. (10 min)
5. Stir, then remove the onion from the fat and drain on paper towel. Wipe the fat from the pan and return the crispy pork belly and caramelised onion to it over medium heat.
6. Mix the marinade. Spoon off a few tablespoons of the marinade and stir them into the stock, then set aside. Pour the rest of the marinade into the pan over the pork belly and onion, reduce the heat slightly and let it simmer.
7. Cook the noodles in a pan of lightly salted water according to the pack instructions. (4 min)
8. Add the spinach to the pan with the noodles and drain. Toss the noodles and spinach with the reserved stock and marinade, then divide between deep bowls.
9. Top with the crispy pork belly, caramelised onion, a raw egg yolk, sriracha, chilli flakes and toasted sesame seeds, then sprinkle with chives and coriander.
