- 1 pcs [leek](https://fridge.menu/en/i/leek)
- 1 pcs [celery stalk](https://fridge.menu/en/i/celery)
- 1 pcs [carrot](https://fridge.menu/en/i/carrot)
- 1 pcs [onion](https://fridge.menu/en/i/onion)
- 2 pcs amaretti biscuits
- 400 g [ricotta](https://fridge.menu/en/i/ricotta)
- 60 g [butter](https://fridge.menu/en/i/butter)
- 100 g [Parmesan](https://fridge.menu/en/i/parmesan)
- [nutmeg](https://fridge.menu/en/i/nutmeg) — to taste

## Steps

1. Dice the pumpkin, celery, carrot and leek, then sweat them in a pan with olive oil, salt and pepper over a low heat.
2. Once the vegetables are soft, blend 3/4 of them with the amaretti biscuits until creamy, and season with nutmeg.
3. Soften the ricotta and transfer it to a piping bag.
4. Blanch the sheets of fresh egg pasta and pat them dry with a towel.
5. Spread the pumpkin cream and ricotta over each sheet, then roll up into cannelloni.
6. Arrange the cannelloni in a baking dish greased with oil or butter.
7. Spread the remaining cream and vegetables on top, sprinkle with Parmesan and dot with butter.
8. Bake in a preheated oven at 200°C for 15–20 minutes. (18 min)
9. Serve the pumpkin cannelloni hot.
