- 70 g [Plain flour](https://fridge.menu/en/i/flour)
- 70 g [Potato starch](https://fridge.menu/en/i/potato-starch)
- 500 g [Mascarpone](https://fridge.menu/en/i/mascarpone)
- 250 g [White chocolate](https://fridge.menu/en/i/white-chocolate)
- 50 g [Icing sugar](https://fridge.menu/en/i/powdered-sugar)
- 80 g [Almonds](https://fridge.menu/en/i/almond)
- 200 g Vanilla wafers
- 80 g [Desiccated coconut](https://fridge.menu/en/i/coconut) — plus extra to taste
- 450 ml [Double cream](https://fridge.menu/en/i/cream)
- [Milk](https://fridge.menu/en/i/milk) — to taste

## Steps

1. Break the eggs into a bowl, add the sugar and beat with a mixer for 10-15 minutes until pale and fluffy. (15 min)
2. Sift the flour and potato starch, and gently fold in with a spatula.
3. Pour the batter into a buttered 22 cm tin and bake at 180°C for 30-35 minutes. (33 min)
4. Let the sponge cool completely.
5. Chop the almonds and vanilla wafers.
6. Melt the white chocolate over a double boiler or in the microwave, then let it cool slightly.
7. Beat the mascarpone with the icing sugar using a mixer.
8. Add the melted white chocolate, chopped almonds and wafers, and mix well.
9. Whip the double cream until thick and gently fold it into the cream mixture.
10. Cut the cooled sponge horizontally into three equal layers.
11. Place the first layer, soak with milk, and spread with cream.
12. Place the second layer, repeat soaking with milk and spreading cream.
13. Place the final layer, soak with milk, and spread cream on top and sides.
14. Decorate the cake with desiccated coconut on the top and sides, and finish with Raffaello sweets.
15. Keep the cake refrigerated until serving.
