# Santiago Cake — gluten-free Spanish almond dessert

## Ingredients

- 3 pcs [Eggs](https://fridge.menu/en/i/eggs)
- 50 g [Sugar](https://fridge.menu/en/i/sugar)
- 1 pinch [Salt](https://fridge.menu/en/i/salt)
- 1 tsp [Cinnamon](https://fridge.menu/en/i/cinnamon)
- 1 pcs [Lemon zest](https://fridge.menu/en/i/lemon-zest)
- 1 pcs [Orange zest](https://fridge.menu/en/i/orange-zest)
- 125 g [Almond flour](https://fridge.menu/en/i/almond-flour) — or finely ground almonds
- pinch [Icing sugar](https://fridge.menu/en/i/powdered-sugar) — for dusting

## Steps

1. Crack the eggs into a large bowl, add the sugar and whisk with a mixer until pale and fluffy.
2. Add a pinch of salt, the cinnamon, lemon zest and orange zest, and mix.
3. Add the almond flour and gently fold in with a spatula until smooth.
4. Transfer the batter into a buttered 20 cm baking tin dusted with flour.
5. Bake in a preheated fan oven at 160°C. (28 min)
6. Let the finished cake cool.
7. Draw the St James's cross symbol on paper, cut it out and place it in the centre of the cake.
8. Dust with icing sugar and remove the stencil.
