## Steps

1. On a work surface, mound the flour, then add the diced butter, eggs, salt and Parmesan.
2. Knead vigorously by hand until the dough is smooth and firm.
3. Wrap the dough in cling film and chill in the fridge. (30 min)
4. Divide the chilled dough into two parts, one slightly larger than the other.
5. Roll out the larger piece on a lightly floured surface to a thickness of 6-7 mm.
6. Cut out a 24 cm circle and shape it as needed.
7. Combine the trimmings with the second piece, roll out and cut a second shape.
8. Stack the two discs on top of each other and cut a 10 cm hole in the centre.
9. Transfer the pieces onto a baking tray lined with baking paper and prick the surface with a fork.
10. Bake in a fan oven preheated to 170°C. (18 min)
11. Leave the pastry to cool completely.
12. Finely chop the basil and mint for the mousse.
13. Mix the ricotta with the cream cheese in a bowl.
