- 800 g [Chopped tomatoes](https://fridge.menu/en/i/canned-chopped-tomatoes) — tinned
- 1 tbsp [Sun-dried tomatoes](https://fridge.menu/en/i/sun-dried-tomatoes) — finely chopped
- 100 ml [Vegetable stock](https://fridge.menu/en/i/stock)

- 50 g [Parmesan](https://fridge.menu/en/i/parmesan) — freshly grated

## Steps

1. Fry the onion in a saucepan with the oil until soft. (6 min)
2. Add the garlic, courgette, chopped tomatoes, sun-dried tomatoes, vegetable stock, thyme and basil.
3. Simmer uncovered for 30 minutes. (30 min)
4. Season with salt and pepper to taste.
5. Put the spinach into a pan of boiling water and let it boil for about a minute, until softened. (1 min)
6. Drain well in a colander and finely chop the spinach.
7. Put the ricotta, Parmesan, eggs, flour, nutmeg, salt and pepper in a bowl and mix to a smooth, thick mixture.
8. Add the mixture to the finely chopped, drained spinach and mix well.
9. Shape small balls and drop them into a pan of water that has just come to the boil.
10. Reduce the heat to medium so the water barely simmers.
11. Cook the malfatti for a few minutes until they rise to the surface and stay at the top. (4 min)
12. Remove the malfatti with a slotted spoon when they float, and serve in the tomato sauce with plenty of grated Parmesan and fresh basil.
