# Tripe with Potatoes

- 800 g [beef tripe](https://fridge.menu/en/i/beef) — dressed (honeycomb) tripe
- 4 pcs [potatoes](https://fridge.menu/en/i/potato)
- 400 g tomato passata
- 250 ml [white wine](https://fridge.menu/en/i/white-wine)
- 1 pcs [carrot](https://fridge.menu/en/i/carrot)
- 1 pcs [celery](https://fridge.menu/en/i/celery)
- 1 pcs [onion](https://fridge.menu/en/i/onion)
- 1 clove [garlic](https://fridge.menu/en/i/garlic)
- [oregano](https://fridge.menu/en/i/oregano) — to taste
- [olive oil](https://fridge.menu/en/i/olive-oil) — to taste
- [salt](https://fridge.menu/en/i/salt) — to taste
- 100 g [Parmesan](https://fridge.menu/en/i/parmesan) — optional

## Steps

1. Cover the tripe with water and vinegar and leave for 1 hour, then rinse and cut into thin strips (60 min)
2. Finely chop the garlic, onion, carrot and celery
3. Pour olive oil into a pot, add the chopped vegetables and fry
4. Add the tripe, fry it, pour in the white wine and season with salt
5. Cook the tripe for 5 minutes (5 min)
6. Add the tomato passata and oregano, cover and cook for about 15 minutes (15 min)
7. Add the diced potatoes and simmer gently for about 1 hour (60 min)
8. Optionally add Parmesan before serving
9. Serve hot with homemade bread

## What was changed

In this version beef tripe has been used instead of veal tripe, as it is easier to find in British shops.
