# Taco Bowls with Beef Mince

## Ingredients

- 8 pcs Tortillas
- 1 pcs Onion — finely chopped
- 400 g Beef mince
- 50 g Chorizo — diced small
- 2 clove Garlic — finely chopped
- 1 pcs Courgette — coarsely grated
- 1 tsp Cumin
- 1 tsp Ground coriander
- 0.5 tsp Smoked paprika
- 400 g Tinned chopped tomatoes
- 50 g Tomato purée
- 2 tbsp Olive oil — for frying
- Salt
- Black pepper — freshly ground
- 1 tsp Butter
- 150 g Sweetcorn
- 1 pcs Avocado — sliced
- 200 g Mature cheddar
- 2 pcs Lime — cut into wedges

## Steps

1. Brush the tortillas with oil and press them into small ovenproof dishes to form bowl shapes. (2 min)
2. Bake in an oven preheated to 175°C (fan) for 8-10 minutes, until lightly browned. (10 min)
3. Remove from the oven and leave to cool in the dishes. They will crisp up as they cool. (5 min)
4. Fry the onion and garlic in olive oil in a pan over medium heat, stirring, until soft. Add the beef mince and diced chorizo, and fry well. (4 min)
5. Add the courgette, spices, tomato purée and chopped tomatoes and bring to the boil. Simmer uncovered for 20 minutes. (2 min)
6. Season with salt and pepper to taste.
7. Fry the remaining sweetcorn kernels in a pan with butter until slightly crisp. (4 min)
8. Serve the taco bowls filled with the mixture, avocado, sweetcorn, cheddar, and a squeeze of lime on top.
