# Trofie with Pesto, Potatoes and Green Beans

## Ingredients

- 500 g Trofie
- 300 g [Potatoes](https://fridge.menu/en/i/potato)
- 150 g [Green beans](https://fridge.menu/en/i/green-beans)
- 70 g [Basil](https://fridge.menu/en/i/basil)
- 50 g [Pine nuts](https://fridge.menu/en/i/pine-nut)
- 70 g [Parmesan](https://fridge.menu/en/i/parmesan)
- 20 g Pecorino Sardo
- 1 clove [Garlic](https://fridge.menu/en/i/garlic)
- 100 ml [Olive oil](https://fridge.menu/en/i/olive-oil)
- 3 g [Coarse salt](https://fridge.menu/en/i/salt)

## Steps

1. Wash the basil leaves and gently pat them dry on a clean towel. In a mortar, crush the garlic with a pestle until creamy.
2. Add the basil leaves and salt, continuing to crush in circular movements.
3. Add the pine nuts and crush until the mixture is smooth and creamy.
4. Add the Parmesan and Pecorino Sardo and crush until fully combined.
5. Pour in the olive oil and work it through with the pestle.
6. Set the pesto aside to rest.
7. Trim the ends of the green beans and rinse them under running water.
8. Cut the potatoes into cubes and place them in a bowl of cold water.
9. Bring water to the boil in a pot, salt it, add the potatoes and cook. (7 min)
10. Add the green beans and cook. (7 min)
11. Add the trofie and cook for the time stated on the packet.
12. Drain everything together, transfer to a bowl and toss with the pesto, adding a little water if needed.
13. Serve with toasted pine nuts and fresh basil leaves.
