# Sunshine Pie with Courgette and Bacon

- 3 pcs [Courgette](https://fridge.menu/en/i/zucchini)
- 250 g [Ricotta](https://fridge.menu/en/i/ricotta)
- 2 pcs [Eggs](https://fridge.menu/en/i/eggs)
- 100 g [Bacon](https://fridge.menu/en/i/bacon)
- 100 g [Provolone](https://fridge.menu/en/i/provolone)
- [Salt](https://fridge.menu/en/i/salt) — to taste
- [Black pepper](https://fridge.menu/en/i/black-pepper) — to taste
- [Nutmeg](https://fridge.menu/en/i/nutmeg) — to taste
- [Poppy seeds](https://fridge.menu/en/i/poppy-seeds) — for sprinkling

## Steps

1. Wash the courgettes, trim the ends and grate them.
2. Add the ricotta and bacon to the courgettes and mix thoroughly.
3. Beat in one egg, add salt, black pepper and nutmeg to taste, and mix again.
4. Cut the provolone into small cubes and add to the filling.
5. Lay one sheet of ready-rolled puff pastry on a baking tray and use a bowl about 12 cm across to mark a circle in the centre.
6. Spread the courgette and ricotta filling in the centre and around it, leaving 1–2 cm from the centre and 1–2 cm from the outer edge.
7. Cover with the second sheet of pastry and press down firmly to outline the filled centre and seal the outer edge.
8. With a knife, cut 16 wedges without separating them from the centre 'sun': first cut the pastry into 4 parts, then each into 4 more.
9. Twist each wedge 45° upward so the filling shows.
10. Beat the second egg and brush it over the whole surface of the pastry, then sprinkle poppy seeds in the centre.
11. Bake in a preheated fan oven at 180°C for about 20–25 minutes, until golden brown. (23 min)
