Carabineros prawns are quite something to behold. Bright red in colour, they take their name from the red uniform of the Spanish customs police. The flesh is firm with a rich and more robust flavour that is quite different from the common prawn. Their large size and distinctive colour makes them a coveted product in the culinary world. They retain the vibrant colour once cooked and are excellent grilled and served simply with a slice of lemon.
